These words were uttered by Dom Pierre Perignon, the French Benedictine Monk upon tasting his newly created champagne. They marked the beginning of the modern history of bubbly.
At Uitsig, almost 400 years later, we strive to illicit the same kind of response with our MCC Blanc de Blanc Brut. Picked from our very best Chardonnay blocks, (the ones currently right beside the cricket oval), only 20 rows from this block make it into each vintage. Hand-picked in the cool, early hours of the morning (at 18-19 balling) we aim for a lower alcohol content and higher acidity to ensure that the end result is predominately fruit driven.
Fermentation takes place in 90% stainless steel barrels, and 10% old 500 litre oak barrels. This provides a very light wooded accent to the wine. Secondary fermentation in bottles takes a further 36 months. This long process ensures that the yeast has enough time to release some of the complexity of the wine, providing a rich mouthfeel, with hints of apples, pear and melba toast coming to the fore.
Toasting to a busy, but fruitful year, Jacques, Neil and myself all noted that Uitsig’s 2012 MCC has developed even more since bottling just a few months prior. Although a little softer now, the brut still has loads of fresh acidity. In Neil’s words, “It zings – with wonderful notes of limes and lemons coming through.”
Jacques believes that although its drinking excellently now, this MCC shows great ageing promise and will continue to get better and better over the next few years.
With an almost salty finish, it’s a bubbly that would pair exceptionally well with oysters, mussels, crayfish with a light vinaigrette, caviar and sashimi. Being the festive season, we settled on a smoked salmon and citrus dish from Jamie Oliver. It’s an ideal starter on a hot summer’s day, and the perfect partner to a chilled glass of Uitsig’s finest.
