Introducing Constantia Uitsig’s Unwooded Chardonnay 2015 – the only unwooded Chardonnay in the Constantia Wine Valley.
With its sold-out predecessor having just been crowned as one of Higgo Jacobs’ Top 6 Unwooded Chardonnays in the country, the expectations on our newest arrival are high. Fortunately, it does not disappoint.
On the nose, white peaches and pears jump from the glass, with a nuttiness that follows soon after. The palate is beautifully complex (thanks to extended yeast contact), exuding flavours of pear as well as a surprising grapefruit tartness on the long finish.
As with all our varietals, Uitsig’s Chardonnay grapes are harvested in the early hours of the morning to ensure cool, pristine fruit. The juice is treated oxidatively without any skin contact and settled overnight to allow bitter phenols to settle out. Racked into stainless steel tanks, two different fermentation temperatures are maintained during fermentation; ensuring a complexity of flavours. After fermentation, the wine is left on the lees for a few months. It’s this extended time of exposure to the dead yeast cells that adds characteristic mouthfeel and complexity to the wine.
