The Constantia Valley is not only famous for being the oldest wine-producing region in the entire southern hemisphere, it’s also become synonymous with really, really good white wines. The cool breezes from the Atlantic, relatively mild winters and sandstone-rich inclines all play their part in consistently ensuring that Constantia stays on the world map of preeminent whites.

With so many impeccable examples on our doorstep (Klein Constantia, Groot Constantia, Buitenverwachting, Eagle’s Nest and Cape Point to name a few), and with Constantia Uitsig’s own Semillon and White Blend consistently stealing the spotlight with 5 star ratings and numerous gold medals, you’d be forgiven for perhaps not knowing much about Uitsig’s Sauvignon Blanc…

Forgiven perhaps, but moreover, missing out.

As Jacques, Neil and myself sat swirling our glasses on Open Door’s patio, the same gentle Atlantic breeze that cools the vineyards gently filtered past and we couldn’t help but wonder if this humble Sauvignon Blanc was perhaps one of the Constantia Valley’s most underrated wines.

Awarded a very decent 4 stars from John Platter, and a silver in the Michelangelo International Wine & Spirits Awards, there’s a stony minerality beneath this wine that seems to provide just the right balance to its elegant and herbaceous nose. Chaste and yet complex, the palate is pure and intense, with a well-balanced acidity.

In John Platter’s own words, “Confident, ultra-fresh and vibrant, this wine exhibits clarity in generous fruitiness with underlying minerality. Time on lees creates extra breadth and gratifying weight.”

Only the first run-off juice is used, which is then cold fermented at 12-14°C before spending a few months on its lees in steel tanks before bottling.

So what would it pair well with? Neil concludes that there are hundreds of options we could go with. Jacques agrees. And I nod too of course – being the least experienced taster in the group!

With summer on its way, and with all of us beginning to feel the fatigue of end-of-year busyness, we settled on something really simple, fresh and easy to throw together: a Pear, Pancetta, Pecan and Pecorino Salad.
